My Love of Leftovers

The idea of leftovers used to make me somewhat queasy, the idea of picked-at food, half eaten, and then stored in a cardboard container to be reheated the next day never sounded appealing. Now that I'm an adult and responsible for our family's grocery budget, I have a new found appreciation of leftovers. I should explain though that just like my taste in music has evolved as I've grown up (although I still love me some N'Sync), my use of the word "leftovers" has also evolved. I still ... Healthy Habanero Chicken Wings – Get Ready for Game Day

Dan (the hubs) is a chicken wing snob connoisseur...he's eaten chicken wings all over the world and 80% of the time that we go out to eat, he orders wings. He loves them, plain and simple. But he's very particular about them, they have to be spicy but they can't just be covered in spicy sauce. That being said, I usually don't cook wings because he never likes them. However, since Super Bowl Sunday hits 2 days before the end of our 21 day sugar detox, I needed to make a snack that we ... Continue Reading

Greek Yogurt Ranch Dip

Sometimes we have the best intentions of eating a "healthy" meal but then we ruin all that effort by drowning our food in high calorie/fat/sugar dressings or dips. I made this Greek Yogurt Ranch Dip to accompany some chicken wings I made and it was great! Don't get me wrong, it isn't Ranch but it tastes pretty darn similar and uses Greek Yogurt and Spices instead of things like mayo, sour cream and preservatives like some ranch dressings contain. Let me know if you try it, my recommenda... Continue Reading

Fast & Filling Lunch Idea

Preparing in advance is one of the best ways to help you stay on track to live a healthy lifestyle. By that I mean having something on hand (in the fridge or in the cupboard) you can pull out at a moments notice to have for a healthy and filling lunch. Let's face it....you can have your meals for the week all planned out in advance and have the best intention to chop up some fresh vegetables and grill some chicken for a nice, healthy salad but then kids have meltdowns, cars breakdown on the ... Greek Pesto Chicken Flatbread

This lunch is so simple but soooo good!!! I made it last week (and posted on Instagram) and I honestly only had about 10 minutes to make lunch but was craving something more than lunch meat and cheese (a regular staple around here lately). A quick trip the grocery store, a few minutes at home mixing ingredients and presto...lunch was made. I took a couple shortcuts to save even more time...I purchased pre-made pesto and used rotisserie chicken breast (rather than cooking my own chicken)... Continue Reading

Broiled Teriyaki Salmon

I don't know how I've gotten this far in life without ever broiling fish....it's so quick! You don't have to wait for the oven to preheat (for some reason my oven takes forever to heat up!!!), it's fast cooking, and makes the fish taste great.   Last night I whipped up a quick broiled salmon using ingredients I had on hand for a light marinade. It came out great! The broiling helps the top of the fish get nice and seared while the inside is so flaky and delicious! I left the marinade ... Continue Reading

Festive Salad

Tonight I served this Festive Salad and it was a big hit (with me and the hubs, not with the kids since they aren't really on the salad bandwagon, mainly due to the lettuce part). It is so flavorful that you really only need a very light dressing and it just looks so pretty that I would totally serve this at a dinner party. I originally got the recipe from the awe-inspiring girls at Tone It Up (I love them!) and saw it posted on their Instagram (here) as "Santa Salad". I adapted the ... Continue Reading

Pumpkin Spice and All Things Nice

That being said, I'm not sure if you are aware that most coffee shop chain's Pumpkin Spice Lattes don't actually contain any pumpkin. They actually just have a bunch of weirdly named ingredients and preservatives and "flavorings" that it kinda takes the fun out of drinking one on a chilly morning (or another while shopping at Target, or another mid-day, or another at night...you get my drift).   So, I hit the world wide web and searched for healthier recipe versions ... The Best Chicken Burger

However, I can't eat a big burger like that all the time, unless I want to be overweight with insanely high cholesterol. So, I save those bad-ass burgers for a special treat, which actually makes me enjoy them even more.   In the meantime, I try to find meals that are equally as flavorful, but with less calories and artery-clogging saturated fat. This recipe is probably my favorite Chicken Burger to date (and I've made a lot of chicken burgers). It's relatively simple ... Continue Reading

Cloudy with a Chance of Meatballs

When I get up in the morning, I like to pretend it's a chilly fall day by wearing soft flannel shirts, lighting candles, putting socks on...and then switch back to my T-shirt and flip flops after 11am when the sun comes out. But I have faith that fall days are near and this Spaghetti Squash with Meatballs is a perfect fall evening meal. It takes some time to cook, but there isn't much prep and not a lot of ingredients involved, so once it's in the oven it pretty much takes care of itself.... Continue Reading

Hearty Chickpea Soup

It wasn't until I started cooking soups myself at home that I began to see the light! Soups can be a great meal (or part of a meal) when made with low sodium broths, vegetables, beans/lentils, great spices and lean proteins (turkey sausage, chicken, fish, etc). I love adding a little heat, since spice can add a lot of flavor to food instead of relying on heavy creams. This was my first time making this Hearty Chickpea Soup that I originally found on Pinterest (seriously, what did we ... Continue Reading

Friday Favorite – Broiled Grapefruit

Each Friday I'll be sharing a new favorite of mine from the past week....it could be a seasonal ingredient that I'm excited to try, a new recipe, or a handy kitchen gadget to help save time. The possibilities are endless, but I think this is a great way to share just a quick new "favorite" of mine from the week with all of you. This week I've been on a grapefruit kick. Fresh grapefruit, grapefruit juice, even grapefruit scented candles...I love it all!  I know everyone isn't a grapefr... Continue Reading

1 Dish Wonder!

I absolutely HATE doing the dishes! I'm sure no one really "loves" washing pots and pans, but I really despise it. I'll almost do anything else to get out of washing dishes...take out the garbage, change the baby's diaper, switch the laundry, even voluntarily watch The History Channel (my nemesis). I especially hate washing pots and pans that have dried food stuck on them.   That's why this recipe is perfect! I found this recipe on Pinterest (seriously, how did we find new ... Continue Reading

5 Ways to Beat Egg Boredom

I am the type of person that looks forward to meals and cannot eat the same thing over and over again without getting insanely bored. My husband on the other hand can eat plain old scrambled eggs for breakfast everyday for the rest of his life and never get bored, but let's face it, he is strange. I'm sharing a few of my favorite egg based recipes/ideas to jazz up your morning routine to beat egg boredom. They are easy and quick...requirements for busy mornings when you have to locate ...
