Meals with a side of Mayhem
Life is an amazing thing….fulfilling, fun, full of friends and family. But let’s face it, sometimes it’s crazy hectic and it takes all you can just to keep up.
Those days seem to pop up a little more often around here lately. Dan’s work schedule has gotten crazier the past few weeks (more travel), the kids are in a tough “clingy for mommy” mood and it just seems that my to do list each day just gets longer and longer. In those moments with it’s particularly busy, it is very hard to find the time (or energy!) to prepare a healthy meal. Heck, it’s hard enough to just find the time to get to the grocery store.
This week will all be about my go to meals that are quick, easy and can be prepared with items that you can have on hand in the freezer or fridge.
Case in point, today’s breakfast. A super simple smoothie that both of my kids loved and took less than 5 minutes to make. A good source of protein, a serving of fruit and even a little leafy green snuck in there (don’t tell the kiddos). The fruit masks the taste of the spinach, I promise! I even had my daughter help me, which occupied her long enough to get the smoothies on the table.
- 1/2 cup plain, greek yogurt
- 1 cup frozen fruit (I used strawberry, banana, pineapple blend)
- 2 handfuls of spinach leaves
- 1/4 cup water
- Throw all ingredients in a blender, puree, and enjoy!
