Recipe Review – Fried Cauliflower Rice
I’m halfway thru my 21 day sugar detox and one positive I’ve already taken away from this challenge is that there are so many great websites/blogs with delicious recipes that fit into this program!
I stumbled across The Whole Smith’s website the other day and have fallen in love! Not only do I love the recipes featured but her posts are hilarious and who can’t use more laughter throughout the day? No one.
I made this Pineapple Fried Cauliflower Rice yesterday for lunch and it was ah-mazing! I loved it, Dan loved it, Sophie loved it and Race loved it! Needless to say there wouldn’t be any leftovers but I just so happen to sneak a small bowl into the fridge before my family devoured it all. Sometimes you just have to be sneaky.
I had to modify it slightly to fit into my 21 day sugar detox guidelines, but all I had to do was omit the pineapple and the raisins. We also used turkey bacon instead of the real stuff, but only because that’s what we had in our fridge.
Anyone else on this cauliflower rice kick? It’s so good and really adds to a lot of dishes, plus it’s quick and can be made ahead of time.

This fried rice is a meal in itself...carrots, onions, scrambled egg, scallions! It's so filling and the seasonings are spot on! We omitted the pineapple and raisins but can't wait to try it with these two additions once we finish our sugar detox. It does take some prep because you have to cook the bacon, eggs, and onions separately, but that's how fried rice is made my friends! Make a big batch because you are definitely going to want leftovers!
