Rosemary Chicken Salad – Light & Healthy Lunch

Being a stay-at-home mom, one of my biggest challenges each day is finding time to sit down and have lunch. Between preparing lunches for the kids, handling preschool drop off/pickup, and running a million errands that by the time lunch rolls around I'm just ready for a nap. No shame in admitting sometimes I stand in front of the fridge and just grab the first thing I see to hold me over until dinner time. In an effort to stay ahead of the game, I created this Rosemary Chicken Salad ... Continue Reading

Post Holiday Healthy Lunch Idea

If you are anything like my family, then your holiday consisted of a carbohydrate filled feast. Which was followed up with leftover turkey sandwiches and endless amounts of pie. By Saturday, I felt like I was sweating mashed potatoes and was definitely ready for a healthy reset on Sunday. And by reset, I mean some vegetables and fruit in place of dinner rolls with butter. While I was creating our meal plan for the week, I knew I needed to incldue an easy, post holiday healthy lunch ... Continue Reading

Salmon Ceviche – Recipe Review

I don't know about you, but I just love those types of dishes that are made with fresh, flavorful, and crisp flavors. They make me think of sunshine, fresh air, and keep you feeling satisfied but not like you could burst the button on your pants. I stumbled across this recipe for Salmon Ceviche on Lyndi Cohen's Nude_Nutritionist's Instagram a few weeks ago and couldn't stop staring at the photo! I took a screenshot of it (that's how I remind myself of recipes I want to try from Instagram) ... Continue Reading

My Love of Leftovers

The idea of leftovers used to make me somewhat queasy, the idea of picked-at food, half eaten, and then stored in a cardboard container to be reheated the next day never sounded appealing. Now that I'm an adult and responsible for our family's grocery budget, I have a new found appreciation of leftovers. I should explain though that just like my taste in music has evolved as I've grown up (although I still love me some N'Sync), my use of the word "leftovers" has also evolved. I still ... Greek Pesto Chicken Flatbread

This lunch is so simple but soooo good!!! I made it last week (and posted on Instagram) and I honestly only had about 10 minutes to make lunch but was craving something more than lunch meat and cheese (a regular staple around here lately). A quick trip the grocery store, a few minutes at home mixing ingredients and presto...lunch was made. I took a couple shortcuts to save even more time...I purchased pre-made pesto and used rotisserie chicken breast (rather than cooking my own chicken)... Continue Reading

No Fuss Lunch in a Rush

Keeping with this week's theme of go-to meals that can be prepared in a rush...here is one of my favorite simple lunch ideas.   Tuna fish (from a can) mixed with dijon mustard, hardboiled egg, avocado, salt and pepper. It's quick, simple and can be made with items usually found in the fridge/pantry. I usually eat mine on top of a bed of lettuce with sunflower seeds sprinkled on top for some crunch, but it can just as easily be made into a sandwich or eaten straight out of the ... Continue Reading
