Grilled Eggplant with Fresh Tomato Salad Recipe

I'm very nervous for when this Meatless Monday movement we joined starts to get boring! So far, we are 4 weeks in and it's been so fun to try new vegetarian recipes each week. This Grilled Eggplant with Fresh Tomato Salad that we had last week was awesome! I love eggplant but I'm not very good at preparing it at home. It tends to turn out very mushy. However, this grilled eggplant recipe was so easy to make and came out perfect. I found the original recipe in the August 2016 ... Continue Reading

Cantaloupe Panzanella Salad

I don't know if I've been living under a rock lately but I just recently discovered Panzanella Salad! I've been experimenting different recipes but this Cantaloupe Panzanella has been on repeat lately. I've been trying to incorporate more fresh fruit into the dishes we enjoy at home. We eat fruit, but it's usually just as a snack or with breakfast. I am trying to jazz it up a bit and really make some fruit based dishes and meals. This Cantaloupe Panzanella Salad does just that by ... Continue Reading

Frozen Fruit Salad with Mint

One of the reasons I just love summer is the plethora of fruit available. Fresh fruit really helps satisfy the huge sweet tooth that I have and it's just so delicious! I'm also lucky that my kids love fresh fruit. That being said, sometimes fresh fruit isn't always available or always on hand in our house. We grocery shop about once a week, but sometimes we just eat all the fresh fruit within days! This recipe for frozen Fruit Salad with mint and tequila was in May's edition of InS... Continue Reading

Meatless Mondays – Spicy Thai Noodles

Today marks my family's third week in our Meatless Mondays movement and so far, we've only had one tiny pitfall. Last Monday, we were out running errands and stopped for lunch at Five Guys Burgers...because I just love a good burger. As I was taking a messy bite out of my huge burger, I was reminded by my lunch date that "meatless mondays" probably pertains to the entire Monday. It honestly dawned on me until that moment that the goal of Meatless Mondays is to go vegetarian for an entire ... Continue Reading

Meatless Monday Recipe – Gnocchi Skillet

We began the Meatless Monday movement at our house last week. You can read all about my family's decision to start in this Meatless Monday post shared earlier today. For our very first meatless dish, I chose this One Pan Gnocchi with Sundried Tomatoes and White Bean Skillet from the Sweet Peas & Saffron website. Gnocchi's are a favorite at our house, but for our first Meatless Monday recipe I wanted to make a more complete dish.  This skillet was fantastic! Very hearty and ... Continue Reading

Zucchini Spiralized Salad – Recipe Redux

I love the idea of enjoying light and refreshing "summer salads". In my mind, I envision a clean, white plate filled with grilled proteins, zesty vinaigrette, and lots of fresh and vibrant seasonal produce. These daydreams typical include the meal being served poolside, while I sip a refreshing cocktail and work on my tan. So maybe I can't quite make the poolside cocktail part an everyday reality, but summer salads are my jam. However, many pasta based salads can be quite filling and not ... Continue Reading

Summer Strawberry Popsicles

As an adult, summers aren't usually as fun, since many of us still have to work. However, I have found new things to love about summer as a grown up. Seeing kids playing outside during the day always makes me smile. I also love the smell of sunscreen and days spent at the pool.  I think my favorite part of summer is the fresh produce that is in abundance during summer. Watermelon, strawberries and corn are top on my list! I recently brought home a few too many strawberries from the ... Continue Reading

A Simple Dessert

I remember my mom hosting a lot of dinners at our house while I was growing up. She is the quintessential host...beautiful centerpieces, fun themes, and great food. My favorite part of the dinner parties was the dessert course once the meal was finished. My mom would bring out a freshly baked cake or other homemade dessert and my mouth would start to water. The cake was almost always brought to the table on a cake stand and served on dessert plates. Now that I'm an adult, I also love ... Continue Reading

The Best Bloody Mary

I just like the vibe of brunch. I love that it's perfectly acceptable to casually arrive at 10:30am (I'm so not a morning person), sweet and savory dishes are both equally in attendance on the menu, and most of all that cocktails are encouraged. This is my kind of meal. It was after enjoying many, many brunches that I fell in love with the Bloody Mary. Probably one of my favorite cocktails ever. I love that the base is tomato juice (kinda feels healthy), spiked with horseradish and ... Continue Reading

Banana & Almond Butter Ice Cream

I love ice cream. However, I never keep it stocked in the freezer because I would literally eat an entire pint in one sitting. The kids and I usually go out for a scoop once a week, but now I keep this Banana & Almond Butter Ice Cream on hand without worry. When I was creating a recipe for the Banana Walnut Sundae, I was testing out homemade "ice cream" made out of frozen bananas and fell in LOVE with the flavor! The frozen bananas give it a great creamy texture similar to real deal. ... Continue Reading

Healthy Summer Treat

We had a taste of summer this past weekend in Northern California...temperatures in the high 80's, afternoons spent by the pool and BBQ'ing with friends and family in the backyard. In addition to flip flops, sunscreen and watermelon, summer always makes me think of frozen treats like ice cream and popsicles. I remember being a kid and getting all sticky while eating my orange push-pop out in the front yard after dinner. In preparation for the warmer weather, I developed these refres... Continue Reading

Grilling and Chilling

Yesterday was the perfect night at our house...we had a fun filled day outside and then continued on into the evening grilling and eating outside. The weather was perfect (82 degrees) and the kids love eating outside and then running around the backyard while Dan and I just sit back and enjoy the view. We typically only grill our proteins: steak, fish, chicken, etc. But I had some artichokes I had purchased earlier in the week so I wanted to try grilling them. I always see pictures ... Spicy Pineapple Salsa

One of the biggest complaints I hear from clients and friends about trying to eat healthier is that it's boring. A lot of the time, I think that people think eating healthy means plain chicken, dried fish, steamed vegetables, and other dishes with zero flavor. While it's true that you have to watch out for sauces when trying to adopt a healthier lifestyle, since they can be full of empty calories and extra fat,  you cannot expect to live off of bland, flavorless chicken, fish or meat. It's ... Continue Reading

Healthy Habanero Chicken Wings – Get Ready for Game Day

Dan (the hubs) is a chicken wing snob connoisseur...he's eaten chicken wings all over the world and 80% of the time that we go out to eat, he orders wings. He loves them, plain and simple. But he's very particular about them, they have to be spicy but they can't just be covered in spicy sauce. That being said, I usually don't cook wings because he never likes them. However, since Super Bowl Sunday hits 2 days before the end of our 21 day sugar detox, I needed to make a snack that we ... Continue Reading
