- 4 chicken breasts
- 1 can diced tomatoes do not drain
- 1 can artichoke hearts drained
- 1/2 can black olives drained
- 1 tbsp Italian seasoning
- salt and pepper
Preheat oven to 375 degrees F
In a baking dish, lay the chicken breast in the bottom in a single layer
Sprinkle chicken with Italian seasoning and season lightly with salt and pepper
Pour can of diced tomatoes over the top of the chicken
Add the artichoke hearts and olives
Place entire dish in the center rack in the oven for 25-30 minutes, until chicken is fully cooked
Allow to cool slightly and serve
