Spicy Chopped Salad

This Spicy Chopped Salad is a summer time staple - easy to make, no cooking required and full of fresh and vibrant flavors.

Ingredients

  • 2 cups arugula rough chop
  • 1 cucumber sliced (peeled if desired)
  • 3 bunches scallions sliced (green and white part)
  • 1 cup leftover rotisserie chicken or any shredded/cubed chicken
  • 1 avocado diced
  • 1/4 cup goat cheese, crumbled blue cheese or feta cheese works too
  • 2 tbsp cilantro rough chop
  • 1/4 cup peanuts chopped
  • 2 oz Frank's Red Hot Sauce or hot sauce of your choosing

Instructions

  • In a large bowl, combine the chopped arugula, cucumber, scallions, chicken, diced avocado and goat cheese. Mix carefully
  • Top with cilantro and and chopped peanuts
  • Drizzle entire salad hot sauce and serve
