Grilled Pineapple with Yogurt, Honey and Mint

A simple, Mediterranean Diet inspired summer snack, this Grilled Pineapple features creamy yogurt, a drizzle of honey, chopped almonds and fresh mint.

Ingredients

  • 1 pineapple
  • 1.5 cups greek yogurt, plain
  • 1/2 cup chopped/slivered almonds
  • 1 tbsp honey
  • 6 mint leaves, chopped

Instructions

  • Cut off the top and bottom of the pineapple, remove skin (if desired) and remove core. Slice into 6 rings, about 1/2 an inch thick. If you don't have a tool that removes the core from a whole pineapple, cut into rings first then use a small, round cookie cutter to remove the core from each ring. You could also cut into triangles instead of rings.
  • Heat grill and place pineapple on warm grill for about 3 minutes on each side, just until grill marks start to form on surface and color becomes golden brown/caramelized. Flip and grill on other side
  • Remove from grill when pineapple is tender but not overly soft
  • Allow to cool slightly before topping each pineapple ring with greek yogurt, then topping with slivered/chopped almonds, drizzle with honey and garnish with fresh mint.
