Roasted Peppers with Garlic and Herbs

- 3 bell peppers
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 3-4 sprigs fresh thyme
- 1 tsp dried oregano
Preheat the oven to 400 degrees F
Cut each bell pepper in half lengthwise, remove any seeds and/or membrane
Place each halved bell pepper in a rimmed baking dish
Drizzle bell peppers with olive oil and then top with minced garlic, dried oregano and fresh thyme
Roast in the oven for 20-25 minutes
