Roasted Peppers with Garlic and Herbs

Ingredients

  • 3 bell peppers
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 3-4 sprigs fresh thyme
  • 1 tsp dried oregano

Instructions

  • Preheat the oven to 400 degrees F
  • Cut each bell pepper in half lengthwise, remove any seeds and/or membrane
  • Place each halved bell pepper in a rimmed baking dish
  • Drizzle bell peppers with olive oil and then top with minced garlic, dried oregano and fresh thyme
  • Roast in the oven for 20-25 minutes
