Greek Salad with Air Fryer Salmon

Full of fresh summer produce, this quick Mediterranean Diet inspired Greek Salad with Air Fryer Salmon is perfect for lunch or dinner.

Ingredients

For the Salmon

  • 6-8 oz Salmon filet(s) We use Wild Alaskan Salmon from Sitka Salmon Shares
  • 1 tbsp extra virgin olive oil
  • 1 tbsp dried basil
  • 1 tbsp dried oregano

For the Greek Salad

  • 1 medium cucumber, diced
  • 1/2 cup cherry tomatoes, sliced in half
  • 1/4 cup red onion, diced
  • 1/4 cup feta cheese, crumbled (divided, save 2 tbsp for end of recipe)
  • 2 tbsp kalamata olives, sliced
  • 1/4 cup vinaigrette (see notes section for recipe or store bought okay as well) Save a bit for the end of the recipe

Remaining Ingredients

  • 2 cups butter lettuce or lettuce of your choice
  • 1 avocado, skin removed and sliced
  • 1 lemon (sliced and leave end for juicing)
  • 1 tbsp fresh dill (optional garnish)

Instructions

  • Quickly marinate the salmon in the olive oil, dried basil and dried oregano (about 10 minutes)
  • Place salmon in the basket of the air fryer, set temp to 390 degrees and cook for 7-8 minutes.
  • While salmon is cooking, combine the diced cucumber, halved cherry tomatoes, diced red onion, kalamata olives and all but 2 tbsp of the crumbled feta in a small bowl.
  • Drizzle with half of the vinaigrette, mix well and set aside
  • On a large platter or in a serving bowl, place the butter lettuce leaves (you may break into smaller pieces if they are large), top with greek salad, sliced avocado and air fryer salmon
  • Sprinkle the reaminign the feta cheese over the salad, squeeze a bit of fresh lemon juice over the top and then garnish with lemon slices and fresh dill
  • You can either drizzle the remaining vinaigrette over the top or serve on the side
