Mediterranean Pasta Salad with Quick Green Goddess Dressing (gluten free)

Ingredients
1boxBanza Chickpea Pasta(or pasta of your choice)
1mediumCucumber, diced
1Bell Pepper, diced
1tbspKalamata Olives, chopped
1tbspSun-dried Tomatoes, chopped
1tbspCilantro, chopped
1 tbspItalian Parsley, chopped
Quick Green Goddess Dressing
1cupGreek Yogurt, plain
2tbspGreen Goddess Seasoning(we get ours at Trader Joe's)
1tspDijon Mustard
1tbspLemon Juice
1cloveGarlic, minced
Instructions
Add pasta to pot of boiling water and cook until al dente (about 8-9 minutes, depending on your pasta choice). Drain and rinse with cold water to stop cooking process. Let cool while you prep other ingredients
In a small bowl, combine the Greek yogurt, green goddess seasoning, dijon mustard, lemon juice and garlic. Stir until well mixed and set aside.
Once pasta is cooled, add to a large mixing bowl. Add diced cucumber, bell pepper, olives and sun dried tomatoes.
Pour dressing over pasta salad and mix until well combined. Top with fresh herbs and enjoy.
