Spicy Breakfast Tacos

An easy but flavor packed Mediterranean diet inspired breakfast recipe, these Spicy Breakfast Tacos are a great way to start the day.

Ingredients

  • 1 tbsp olive oil
  • 3 egg, cracked and whisked in bowl
  • 3 corn tortillas, street taco size
  • 1 small tomato, sliced
  • 1/2 avocado, sliced
  • 1/4 cup microgreens
  • 3 tbsp chipotle bitchin' sauce
  • Optional Garnish - fresh chives

Instructions

  • In a pan over medium heat, add your olive oil and then whisked eggs. Cook until fluffy and scrambled, about 2-3 minutes
  • Lightly char tortillas over stove for 30 seconds each side
  • Add micro greens on bottom of each tortilla, then add scrambled eggs, slice of tomato and avocado
  • Drizzle about 1 tablespoon bitchin' sauce over each taco and garnish with fresh chives
