Spicy Breakfast Tacos
An easy but flavor packed Mediterranean diet inspired breakfast recipe, these Spicy Breakfast Tacos are a great way to start the day.

- 1 tbsp olive oil
- 3 egg, cracked and whisked in bowl
- 3 corn tortillas, street taco size
- 1 small tomato, sliced
- 1/2 avocado, sliced
- 1/4 cup microgreens
- 3 tbsp chipotle bitchin' sauce
- Optional Garnish - fresh chives
In a pan over medium heat, add your olive oil and then whisked eggs. Cook until fluffy and scrambled, about 2-3 minutes
Lightly char tortillas over stove for 30 seconds each side
Add micro greens on bottom of each tortilla, then add scrambled eggs, slice of tomato and avocado
Drizzle about 1 tablespoon bitchin' sauce over each taco and garnish with fresh chives
