Easy and Delicious Summer Slaw
Trust us when we say you have to try this Summer Slaw recipe. It's light, fresh and so easy to put together. Perfect for leftovers as well.

- 8-10 oz shredded green cabbage
- 2 cups shredded kale
- 1 cup shredded carrots
- 4 each scallions, chopped (green and white parts)
- 1 tbsp fresh herbs (cilantro, parsley or basil)
- 1/4 cup slivered almonds
Dressing
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 1 tbsp horseradish mustard (you can also use spicy brown mustard or dijon)
- 1 tbsp honey
- 1 pinch salt
Combine the shredded cabbage, kale, carrots, scallions and slivered almonds in a large bowl
In a small bowl or jar, combine the lemon juice, olive oil, mustard, honey and salt. Mix well to combine
Pour dressing over slaw and mix well to incorporate. Allow slaw to sit for a while before serving. If saving for later, store in fridge
