Arugula Tuna Wrap

A tangy and flavorful lunch recipe, this Arugula Tuna Wrap is easy to make and can even be made in advance. Just a few simple ingredients transform canned tuna into a delightful sandwich wrap.

Ingredients

  • 2 cups arugula, divided
  • 1/2 cup Italian parsley, chopped
  • 2 each scallions, sliced
  • 1 clove garlic, chopped
  • 1 cup Greek Yogurt, plain
  • 1 tsp white wine vinegar
  • 1 tsp fresh lemon juice
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 8 oz canned tuna
  • 2 whole wheat tortillas

Instructions

  • In a food processor, combine 1 cup arugula, the parsley, scallions, garlic, Greek Yogurt, white wine vinegar, lemon juice, salt and pepper. Puree until well combined and the herbs are finely chopped. The mixture will be a bit chunky and that's perfect.
  • Pour the mixture into a mixing bowl and add the tuna. Mix until well combined.
  • To prepare the wrap, divide the remaining arugula and place it down the center of each tortilla. Spoon the tuna mixture in the center of both tortillas. Wrap the tortillas and cut each one in half to serve.
