Pan Roasted Fish with Spicy Salsa

This easy Pan Roasted Fish with Spicy Salsa recipe comes together quickly and is bursting with flavor. A family favorite dinner.

Ingredients

  • 2 tbsp extra virgin olive oil
  • 2 filet cod (about 3-4 oz each filet)
  • 1 tsp ground cumin
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp garlic powder
  • 16 oz Sam's Fresh Medium Salsa
  • Fresh parsley or cilantro for garnish (if desired)

Instructions

  • In a large skillet, heat the olive oil over medium heat
  • Pat cod dry with a paper towel and then season each side with cumin, salt, pepper and garlic powder
  • Once oil is warm, add cod filets and sear (without moving) for 1 minute on each side. Please note the fish is not cooked at this point, you are just browning.
  • Add Sam's Fresh Salsa, cover, and simmer fish until fully cooked (about 8 minutes, depending on the thickness of your fish). Fish will lightly flake with fork when cooked through or you can use thermometer to ensure fish is 145 degrees F.
  • Remove fish from pan, top with salsa and garnish with fresh parsley or cilantro.
