To cook the Thai-Style Coconut Chicken, simply follow the directions on the back of the package. You just heat 1 tbsp olive oil in a skillet over medium high heat, add the chicken and brown on each side for 1-2 minutes. Then add the sauce and let simmer for about 30 seconds.
While the chicken is cooking, lightly char the corn tortillas over the stove's burner or by lightly searing in a large pan over medium-high heat
To assemble the tacos, simply add the prepared Thai-Style Coconut Chicken to each tortilla and top with carrots, bell pepper, cilantro and chopped peanuts. Add any remaining sauce from the pan over tacos and squeeze with fresh lime.
