Hearty Curry Couscous

- 2 cups couscous
- 2 tbsp curry powder
- 3 tbsp olive oil
- salt and pepper to taste
- 4 scallions thinly sliced
- 2 tbsp dried cranberries
- 2 tbsp golden raisins
- 1/4 cup pistachios chopped
- 2 tbsp dried apricots chopped
Prepare the couscous according to the package instructions
Once cooked, set in a large bowl and allow to cool slightly
In a small bowl or jar, combine curry and olive oil. Mix well, then season with salt and pepper as needed
Pour curry dressing over couscous
Add chopped scallions, cranberries, golden raisins, apricots and pistachios
Mix well and enjoy!
