Roasted Tomatoes with Garlic and Herbs

These Roasted Tomatoes are drizzled with olive oil and flavored with fresh garlic and oregano to create a delicious dish that is packed with summer flavors.

Ingredients

  • 2 cups cherry tomatoes halved
  • 3 tbsp olive oil
  • 3 garlic cloves 2 smashed, 1 minced
  • Handful fresh oregano
  • salt and pepper

Instructions

  • Preheat oven to 375 degrees
  • On a non-stick baking sheet, layer tomatoes in a single layer
  • Drizzle with olive oil, minced garlic, salt and pepper
  • Mix so tomatoes are coated evenly
  • Add smashed garlic to pan with few sprigs of fresh oregano
  • Place in middle rack of oven for about 25-30 min, until tomatoes begin to burst open
  • Remove from oven and enjoy
