Blueberry Yogurt Popsicles
Creamy greek yogurt combines with a simple blueberry compote to create these tangy and naturally sweetened Blueberry Yogurt Popsicles

- 32 oz plain greek yogurt
- 1 cup fresh blueberries
- 1/2 cup water
- 1/2 lemon juiced
- 1 tbsp honey
In a small saucepan, add the blueberries, water, lemon juice and honey
Allow to simmer until blueberries burst and mixture becomes a thick syrup-like compote (about 15-20 min)
Once compote is thick, remove from heat and allow to cool completely
Fill each popsicle mold with 2 scoops yogurt, followed by a scoop of blueberry compote
Continue alternating between yogurt and compote until each popsicle mold is full
Cover and freeze until set, about 4-5 hours
