Grilled Stone Fruit with Ricotta

Grilled Stone Fruit served with homemade Ricotta Cheese and lightly drizzled with honey and fresh mint makes a perfect summer dessert.

Ingredients

  • 2 peaches
  • 3 plums
  • 3 apricots
  • 1/2 cup cherries
  • Coconut Oil Spray
  • 1 cup Ricotta Cheese
  • 2 tbsp honey
  • 1 tbsp fresh mint chopped

Instructions

  • Slice and remove the pits from the stone fruits.
  • You can slice the fruit or leave halved, whatever your preference is. I did a combination of some halved, some sliced into quarters.
  • I used a cherry pitter to remove the pits from the cherries and then sliced them in half as well.
  • Heat a grill to medium-high heat
  • Spray the grill with coconut oil and grill each fruit for about 2 min each side Note the cherries grill very quickly and only take about 1 min each side
  • Carefull remove the fruit from the grill and place on a platter
  • Add 1 cup ricotta cheese
  • Drizzle fruit and ricotta cheese with honey and top with fresh mint
  • Serve and enjoy!
  • Note - you can choose whatever stone fruit you like (nectarines, peaches, plums, apricots, cherries, etc)
