Grilled Stone Fruit served with homemade Ricotta Cheese and lightly drizzled with honey and fresh mint makes a perfect summer dessert.

Ingredients
2peaches
3plums
3apricots
1/2cupcherries
Coconut Oil Spray
1cupRicotta Cheese
2tbsphoney
1tbspfresh mintchopped
Instructions
Slice and remove the pits from the stone fruits.
You can slice the fruit or leave halved, whatever your preference is. I did a combination of some halved, some sliced into quarters.
I used a cherry pitter to remove the pits from the cherries and then sliced them in half as well.
Heat a grill to medium-high heat
Spray the grill with coconut oil and grill each fruit for about 2 min each side Note the cherries grill very quickly and only take about 1 min each side
Carefull remove the fruit from the grill and place on a platter
Add 1 cup ricotta cheese
Drizzle fruit and ricotta cheese with honey and top with fresh mint
Serve and enjoy!
Note - you can choose whatever stone fruit you like (nectarines, peaches, plums, apricots, cherries, etc)
