Garlic and Herb Roasted Pork with Honeycrisp Apples

Ingredients

  • Smithfield Marinated Fresh Roasted Garlic & Herb Pork Loin Filet
  • 3 Tbsp Olive Oil divided
  • 1 tbsp butter
  • 2 medium honeycrisp apples cored and sliced (any apple flavor will be great!)
  • 1 small red onion peeled and thinly sliced
  • 3 sprigs fresh thyme

Instructions

  • Preheat oven to 425 degrees
  • Line a roasting pan with foil, set aside
  • Heat 2 tbsp olive oil in large skillet/pan over medium-high heat on stove
  • Remove pork filet from package and sear in skillet/pan for 2 minutes on each side
  • Place seared pork filet in roasting pan and place in oven for 20-25 minutes
  • In same skillet, melt butter and remaining 1 tbsp olive oil over low heat on stove
  • Add sliced apples and onions to pan and sauté for 20 min, until tender and golden brown (stir occasionally)
  • Let pork filet rest for 5 minutes before slicing
  • Serve the pork on top of the apples and onions
