Ingredients

  • 2 tablespoons olive oil
  • 3 garlic cloves minced
  • 8 oz mushrooms sliced
  • 3 links Chicken Sausage fully cooked, chopped
  • 1/2 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 quart 32 ounces low-sodium chicken stock
  • 12-14 ounces fresh spinach chopped
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large sauce pot over medium heat
  • Add garlic and mushrooms, and sauté over medium heat until tender, about 5-7 minutes, Then add chicken sausage and allow to brown for 3 minutes
  • Add dried herbs and chicken stock
  • Bring to a boil, then reduce heat to a simmer
  • Cover and allow to simmer for 5 minutes. Add spinach and allow to simmer for additional 5 minutes
  • Season with salt and pepper
