Sausage and Spinach Soup

- 2 tablespoons olive oil
- 3 garlic cloves minced
- 8 oz mushrooms sliced
- 3 links Chicken Sausage fully cooked, chopped
- 1/2 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 quart 32 ounces low-sodium chicken stock
- 12-14 ounces fresh spinach chopped
- Salt and pepper to taste
Heat olive oil in a large sauce pot over medium heat
Add garlic and mushrooms, and sauté over medium heat until tender, about 5-7 minutes, Then add chicken sausage and allow to brown for 3 minutes
Add dried herbs and chicken stock
Bring to a boil, then reduce heat to a simmer
Cover and allow to simmer for 5 minutes. Add spinach and allow to simmer for additional 5 minutes
Season with salt and pepper
