- 1 cup Quinoa prepared
- 1/4 cup Dried Cranberries unsweetened
- 1/2 Avocado diced
- 1/2 Orange segmented and chopped
- 1/4 cup Walnuts chopped
- 2 Tbsp Red Onion diced
- 1/3 cup Olive Oil
- 2 Tbsp Lemon Juice
- Salt and Pepper to taste
Prepare the quinoa per the instructions on the package. Allow to cool before use
Combine the quinoa, cranberries, avocado, orange, walnuts and red onion in a bowl.
In a small bowl, whisk together the olive oil, lemon juice, salt and pepper.
Slowly drizzle the dressing over the quinoa salad
Toss and enjoy!
