Ingredients

  • 1 cup Quinoa prepared
  • 1/4 cup Dried Cranberries unsweetened
  • 1/2 Avocado diced
  • 1/2 Orange segmented and chopped
  • 1/4 cup Walnuts chopped
  • 2 Tbsp Red Onion diced
  • 1/3 cup Olive Oil
  • 2 Tbsp Lemon Juice
  • Salt and Pepper to taste

Instructions

  • Prepare the quinoa per the instructions on the package. Allow to cool before use
  • Combine the quinoa, cranberries, avocado, orange, walnuts and red onion in a bowl.
  • In a small bowl, whisk together the olive oil, lemon juice, salt and pepper.
  • Slowly drizzle the dressing over the quinoa salad
  • Toss and enjoy!
