Light and fresh, this chilled zucchini salad offers fresh vegetables, crunchy sunflower seeds, tangy olives and salty prosciutto. The perfect summer dish.

- 4 zucchini
- 2 carrots
- 1/3 cup kalamata olives pitted
- 3 slices prosciutto
- 2 Tbsp sunflower seeds unsalted
- Lemon Vinaigrette
- 1/4 cup Olive Oil
- 2 tsp red vine vinegar
- 2 Tbsp fresh lemon juice
- 1 tsp dijon mustard
- 1 Tbsp chives chopped
- pinch of salt
Using a spiralizer, create "noodles" with the zucchini and carrots
Use a vegetable peeler if you don't have a spiralizer
Combine spiralized zucchini and carrots
Add sunflower seeds and olives
Tear prosciutto into bite sized pieces and lay on top of salad
Pour dressing over salad before serving
