Cast Iron Skillet Salmon

Ingredients

Panko Crust Topping

  • 1/2 cup panko style breadcrumbs
  • 1 tsp garlic powder
  • 1/2 tsp dried basil
  • 1/2 tsp dried parsley
  • 1 tbsp olive oil
  • salt and pepper to taste

For The Salmon

  • 6-8 oz salmon fillet
  • 1-2 tbsp dijon mustard
  • 1 tsp lemon zest
  • 1 tbsp olive oil
  • 3-4 lemon slices

Instructions

  • Preheat oven to 425 degrees F
  • Place the panko, garlic, basil, and parsley in a small bowl
  • Add 1 tbsp olive oil and mix until well combined, season with salt and pepper to taste. Set aside
  • Place the salmon (skin/bottom side down) on a cutting board or piece of parchment paper.
  • Spread dijon mustard all over top side of salmon 
  • Add lemon zest directly on top of mustard
  • Press panko mixture directly on top of mustard layer and press slightly so it sticks to the mustard
  • In a large skillet, heat remaining olive oil over medium-high heat
  • Place salmon (mustard/panko side up) in skillet and let sear for 4-5 minutes without moving
  • Top salmon with lemon slices and move entire skillet to oven to bake
  • Cook for additional 6 minutes, until salmon cooked thru and panko crust is golden brown
  • Remove from oven and allow to rest for 5 minutes before serving
