Sweet & Spicy Jalapeño Cranberry Sauce

Ingredients

  • 3 cups cranberries I use frozen
  • 1 tbsp olive oil
  • 1/2 jalapeno, diced seeds removed if you don't like much spice
  • 1/4 tsp dried mustard powder
  • 1/4 tsp fresh ginger grated
  • 1/4 cup honey
  • 1/2 cup water
  • 1/4 tsp salt

Instructions

  • In a medium saucepan, heat olive oil over medium heat.
  • Add diced jalapeño and allow to sauté for 5 minutes
  • Add mustard and ginger and stir well to combine. Then add cranberries, water, honey and salt and bring to boil, stirring often
  • Reduce heat to low and allow to simmer for 10-15 minutes, until sauce is thick and most of the cranberries have burst
  • Remove from heat and allow to cool
