Place farro and vegetable broth into a pot and bring to a boil. Cover and reduce to a simmer for 10 minutes (farro will absorb liquid). Remove from heat and set aside to cool slightly
In a large bowl, add slightly cooled farro, cucumber, tomato, scallions, mint and parsley, Stir to combine
Top with feta cheese, olive oil and lemon juice. Season with salt and pepper as needed
Notes
You can use water in place of broth for cook farro.If using for meal prep, add olive oil and lemon juice right before serving to avoid the dish getting soggy.
