Greek Farro Salad with Fresh Herbs

A hearty and filling greek farro salad filled with mediterranean ingredients and lots of fresh herbs.

Ingredients

  • 2 cups farro
  • 4 cups vegetable broth
  • 3 english cucumbers small
  • 1 cup cherry tomatoes halved
  • 4 scallions chopped
  • 1/2 cup fresh mint chopped
  • 1/2 cup Italian parsley chopped
  • 1/4 cup feta cheese crumbled
  • 1/3 cup olive oil
  • 2 lemons juiced
  • salt and pepper to taste

Instructions

  • Place farro and vegetable broth into a pot and bring to a boil. Cover and reduce to a simmer for 10 minutes (farro will absorb liquid). Remove from heat and set aside to cool slightly
  • In a large bowl, add slightly cooled farro, cucumber, tomato, scallions, mint and parsley, Stir to combine
  • Top with feta cheese, olive oil and lemon juice. Season with salt and pepper as needed

Notes

You can use water in place of broth for cook farro.
 
If using for meal prep, add olive oil and lemon juice right before serving to avoid the dish getting soggy.
