Sheet Pan Chicken Za'atar
Sheet Pan Chicken Za'atar with roasted potatoes, kale and lemon is the perfect mediterranean diet inspired dinner for any night of the week.

- 1 lb fingerling potatoes cut in half
- 2-3 tbsp olive oil
- 2 lb chicken drumsticks or chicken of your choice
- 4 tbsp za'atar spice blend
- 2 tsp smoked paprika
- 2 lemons halved
- 2 cups baby kale leaves
- salt and pepper to taste
Preheat oven to 400 degree F
On a large foil covered sheet pan, lay halved potatoes in a single layer and drizzle with 1 tbsp olive oil, salt and pepper
Roast in oven for 20 minutes
While potatoes are cooking, mix 2 tbsp olive oil with za'atar and smoked paprika in a small bowl
Rub za'atar and oil mixture over chicken, coating it well
Remove potatoes from oven and add chicken and lemon halves
Return to oven for additional 25 minutes (until chicken is fully cooked)
Remove pan from oven and add baby kale leaves and last tbsp of olive oil. Return to oven and cook for additional 5 minutes
Remove and let cool slightly before serving
