Lemon Ginger Potato Salad (no mayo)

This Lemon Ginger Potato Salad is a mayo free potato salad recipe that is infused with lemon and ginger tea for a zesty, creamy twist on a classic dish.

Ingredients

  • 6 Stash Lemon and Ginger flavored tea bags
  • 2 quarts water
  • 1 pound red potatoes sliced
  • 3 stalks celery diced
  • 4 green onions chopped, divided in 2 portions
  • 1/4 cup parsley roughly chopped
  • 2 cloves garlic peeled, roughly chopped
  • 1 inch piece of fresh ginger peeled, rough chop
  • 2 tbsp dijon mustard
  • 1 lemon zested and juiced
  • 1/4 cup olive oil
  • salt and pepper to taste

Instructions

To Cook the Potatoes

  • Fill large stock pot with water and bring to a boil
  • Once boiling, reduce heat to low and add Stash Lemon and Ginger Tea bags
  • Allow to steep 3-5 minutes, then remove and discard tea bags
  • Add sliced red potatoes directly to tea infused water and return to a boil
  • Once potatoes are done (fork tender), save 1 cup of tea infused cooking water for dressing. Drain potatoes and allow to cool
  • Once potatoes are cool, place in a large bowl and add chopped celery and 1/2 of the chopped green onions
  • In a food processor, blend parsley, remaining green onions, ginger and garlic until finely chopped but not completely pureed
  • Add dijon mustard, lemon juice, and olive oil and puree until blended
  • With food processor running, slowly add tea infused cooking water. Continue slowly adding until sauce is emulsified (about 1/4-1/2 cup cooking water typically)
  • Taste and season as needed with salt and pepper
  • Pour sauce over potato salad and mix well
  • Garnish with lemon zest and a little more chopped parsley and enjoy!

This recipe was inspired by this Herbed Red Potato Salad Recipe by Cookie & Kate but adapted and changed to make it my own.
