Add curry powder, garlic powder, and dried basil. Mix well until all chicken is equally coated
In a medium saute pan, heat 1 tbsp olive oil over medium-high heat
Add seasoned chicken and cook about 4-5 minutes each side
Remove from pan and allow to cool
To Prepare Greek Chicken Bowls
Place 1 cup of arugula in each of your 4 containers
Top with chopped cucumber, onion and kalamata olives.
Chop cooled chicken and divide equally between 4 containers
If eating right away - top with dollop of tzatziki sauce, sunflower seeds, and pistachio seeds. Drizzle with olive oil and fresh lemon juice if desired
If prepping bowls for later consumption, add tzatziki, sunflower seeds, and pistachios right before serving to prevent lettuce from getting soggy.
