These Mini Salmon Sliders are an easy and fun way to introduce fish and seafood to kids and create a more mediterranean diet inspired lifestyle at home.

Ingredients
1tbspolive oil
8ozsalmon filetsI used two 4oz salmon filets to create 4 mini sliders
salt and pepperto taste
4mini burger bunsor small dinner rolls
1cupmicro greensor leafy green/lettuce of your choice
1cupgreek yogurt, plain
Instructions
Heat 1 tablespoon olive oil in a skillet over medium heat on the stove
Season salmon lightly with salt and pepper (omit if you don't like salt or pepper)
Place salmon in the pan and cook for about 4 minutes on each side, until fish is cooked through
Remove from heat and allow to cool slightly before cutting each filet in half. So that you have 4 servings of salmon, to create 4 mini sliders
On each mini burger bun (or small dinner roll), place 1/4 cp of microgreens (or lettuce of your choice) on bottom, top with salmon and finish with 1/4 cup greek yogurt on top.
