Slow Cooker Fajitas
Delicious and convenient, this Slow Cooker Fajita recipe is a mediterranean-diet inspired dish that is perfect any night of the week.

- 1 can Diced Tomatoes (15.5 oz can) do not drain
- 1 Onion, sliced red or white onion, or 1/2 of each
- 2 Bell peppers, sliced
- 4 Chicken breasts or thighs, sliced into strips boneless, skinless
- 2 tbsp Taco Seasoning
- 4 Tortillas
- Additional Garnishes - guacamole, salsa, shredded lettuce, etc
Place the jar of diced tomatoes in the bottom of the crock pot, including the liquid
Place the sliced chicken, onion and bell peppers on top of the diced tomatoes
Add 2 tbsp taco seasoning and lightly stir to mix together
Cover and cook on high for 2 hours or low for 4 hours
Once done (chicken is all the way cooked through) serve immediately on tortillas and desired garnishes.
