Slow Cooker Fajitas

Delicious and convenient, this Slow Cooker Fajita recipe is a mediterranean-diet inspired dish that is perfect any night of the week.

Ingredients

  • 1 can Diced Tomatoes (15.5 oz can) do not drain
  • 1 Onion, sliced red or white onion, or 1/2 of each
  • 2 Bell peppers, sliced
  • 4 Chicken breasts or thighs, sliced into strips boneless, skinless
  • 2 tbsp Taco Seasoning
  • 4 Tortillas
  • Additional Garnishes - guacamole, salsa, shredded lettuce, etc

Instructions

  • Place the jar of diced tomatoes in the bottom of the crock pot, including the liquid
  • Place the sliced chicken, onion and bell peppers on top of the diced tomatoes
  • Add 2 tbsp taco seasoning and lightly stir to mix together
  • Cover and cook on high for 2 hours or low for 4 hours
  • Once done (chicken is all the way cooked through) serve immediately on tortillas and desired garnishes.
