Mediterranean Pizza with Homemade Pizza Dough

Ingredients

For The Homemade Pizza Dough

  • 1 3/4 - 2 1/4 cups all purpose flour
  • 1 envelope Fleischmann'sĀ® RapidRiseĀ® Yeast
  • 1 1/2 tsp sugar
  • 3/4 tsp salt
  • 2/3 cup very warm water 120-130 degrees F (test with thermometer)
  • 3 tbsp Canola oil

For the Pizza

  • 1 1/2 cups hummus
  • 2 ounces fresh mozzarella cheese, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1 cup artichoke hearts, well drained
  • 1/4 cup kalamata olives, sliced
  • 1/4 bell pepper, thinly sliced
  • 2 tbsp fresh basil, chopped for garnish

Instructions

  • Preheat the oven to 425 degrees F
  • In a large bowl, combine 1 cup of the flour, packet of yeast, sugar and salt. Mix well
  • Add the warm water and oil to flour mixture and stir to incorporate
  • Slowly add additional flour until a sticky dough forms
  • Turn dough out of bowl onto a well floured surface
  • Using well floured hands, kneed dough until smooth and elastic. Form into a ball and allow to rest for 10 minutes
  • Use a rolling pin to roll dough out into a large circle
  • Place dough onto a well greased pizza dish or baking sheet
  • Top with hummus, mozzarella cheese, tomatoes, olives, artichoke hearts, and bell pepper
  • Place on bottom rack of oven and bake until crust is golden brown and cheese is bubbly, about 12-15 minutes
  • Remove from oven, garnish with fresh basil and enjoy
