Ingredients
2cupsarugula, divided
1/2cupItalian parsley, chopped
2eachscallions, sliced
1clovegarlic, chopped
1cupGreek Yogurt, plain
1tspwhite wine vinegar
1tspfresh lemon juice
1/4tspsalt
1/4tsppepper
8ozcanned tuna
2whole wheat tortillas

In a food processor, combine 1 cup arugula, the parsley, scallions, garlic, Greek Yogurt, white wine vinegar, lemon juice, salt and pepper. Puree until well combined and the herbs are finely chopped. The mixture will be a bit chunky and that's perfect.
Pour the mixture into a mixing bowl and add the tuna. Mix until well combined.
To prepare the wrap, divide the remaining arugula and place it down the center of each tortilla. Spoon the tuna mixture in the center of both tortillas. Wrap the tortillas and cut each one in half to serve.
