Easy Sweet Potato Recipe
An easy sweet potato recipe that is perfect for meal prepping to use for fast weekday lunches or meatless dinner side dishes.

- 2 pound sweet potatoes
- 3 tbsp extra virgin olive oil
- 2 tbsp garlic powder
- 2 tbsp onion powder
- 1 tbsp dried basil
- 1/4 tsp salt
- 1/2 tsp black pepper
Preheat oven to 375 degrees F
Wash sweet potatoes and cut into one inch cubes. Note - the more uniform the pieces the more evenly they will cook
Add cut sweet potato to large bowl, drizzle with olive oil and add garlic, onion, basil, salt and pepper. Mix well to combine
Spread sweet potatoes into large baking dish place in oven for 45 minutes, switch halfway through
