Grilled Shrimp Tostadas with Watermelon Jicama Salsa

Ingredients

Tequila Lime Shrimp

  • 1 lb shrimp (raw, peeled, deveined)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp tequila
  • 1 lime zest and juice
  • 1 tsp honey
  • 1/2 jalapeno, diced and seeds removed
  • 2 tbsp cilantro, chopped

For the Tostadas

  • 6 tostadas
  • 1 cup guacamole
  • 1/4 red onion, diced
  • 1/3 cup Sam's Fresh Watermelon Jicama Salsa
  • Optional Garnish - additional fresh cilantro, chopped

Instructions

  • In a large bowl, combine the shrimp, olive oil, tequila, zest and juice of 1 lime, honey, jalapeno and 2 tbsp of chopped cilantro
  • Mix well to combine and allow shrimp to marinade for 20-30 minutes for best flavor
  • Once ready, thread shrimp onto wooden skewers. Place on heated grill for 3-4 minutes on each side. Remove and set asdie to cool slightly
  • To make each tostada, place guacamole on each tostada chip and then top with diced red onion, grilled shrimp, and Sam's Fresh Watermelon Jicama Salsa. Garnish with additional chopped cilantro (if desired) and enjoy!
