This Hot Honey Chicken Bowl is an easy dinner idea that is not only delicious but filling, full of flavor and makes great leftovers.

Ingredients
2cupscooked rice
2 tbsp extra virgin olive oil (divided)
1headbroccoli(cut into florets)
1poundground chicken
1-2carrots(peeled and cut into ribbons)
2scallions, diced(separate green and white part)
1avocado, sliced
1tbspsesame seeds(garnish)
hot honey(for drizzling on top)
Sauce
3tbspsoy sauce
1/4cuphoney
1-2tbspsesame oil
1inchfresh ginger, grated
2clovesgarlic, minced
2tbsphot sauce
1pinchred pepper flakes
salt and pepper

Instructions
In a large skillet, heat 1 tbsp olive oil over medium heat
Add broccoli florets and season lightly with salt and pepper
Cook broccoli until starting to soften, about 10 minutes
Move cooked broccoli to a bowl and add remaining 1 tbsp olive oil to same pan
Add ground chicken and cook until brown, over medium heat
Once browned, add broccoli back to pan along with white part of the scallions and the sauce
Stir well and cook for an additional 2-5 minutes . Remove from heat
Add a 1/2 cup rice to each bowl, then top with honey chicken & broccoli mixture
Garnish with green part of scallions, sesame seeds, carrot ribbons and sliced avocado and drizzle of hot honey
Sauce
In a jar or cup combine honey, hot sauce, soy sauce, sesame oil, ginger, garlic and red pepper flakes. Stir to combine well. Taste and season as needed with salt and pepper
