Hot Honey Chicken Bowl

This Hot Honey Chicken Bowl is an easy dinner idea that is not only delicious but filling, full of flavor and makes great leftovers.

Ingredients

  • 2 cups cooked rice
  • 2 tbsp extra virgin olive oil (divided)
  • 1 head broccoli (cut into florets)
  • 1 pound ground chicken
  • 1-2 carrots (peeled and cut into ribbons)
  • 2 scallions, diced (separate green and white part)
  • 1 avocado, sliced
  • 1 tbsp sesame seeds (garnish)
  • hot honey (for drizzling on top)

Sauce

  • 3 tbsp soy sauce
  • 1/4 cup honey
  • 1-2 tbsp sesame oil
  • 1 inch fresh ginger, grated
  • 2 cloves garlic, minced
  • 2 tbsp hot sauce
  • 1 pinch red pepper flakes
  • salt and pepper

Instructions

  • In a large skillet, heat 1 tbsp olive oil over medium heat
  • Add broccoli florets and season lightly with salt and pepper
  • Cook broccoli until starting to soften, about 10 minutes
  • Move cooked broccoli to a bowl and add remaining 1 tbsp olive oil to same pan
  • Add ground chicken and cook until brown, over medium heat
  • Once browned, add broccoli back to pan along with white part of the scallions and the sauce
  • Stir well and cook for an additional 2-5 minutes . Remove from heat
  • Add a 1/2 cup rice to each bowl, then top with honey chicken & broccoli mixture
  • Garnish with green part of scallions, sesame seeds, carrot ribbons and sliced avocado and drizzle of hot honey

Sauce

  • In a jar or cup combine honey, hot sauce, soy sauce, sesame oil, ginger, garlic and red pepper flakes. Stir to combine well. Taste and season as needed with salt and pepper
