Ingredients
1poundground turkey
2tbspolive oil, divided
3-5 tbsptaco seasoning
1/2 cupshredded cheese
1/2canrefried beans
1/3cupDesert Pepper Trading Co Cantina Salsa (+ more for serving)
16mini flour tortillas(can substitute corn in desired)
Instructions
Heat 1 tbsp olive oil in large skillet over medium heat. Once warm, add ground turkey and cook until brown and heated through
Once cooked, add 1-2 tbsp taco seasoning and 1/3 cup water. Stir to combine and then add 1/2 cup shredded cheese (we used cheddar but you can use whatever you prefer)
Remove from heat and allow to cool slightly
In small food processor or blender, combine 1/2 can refried beans, Desert Pepper Trading Co Cantina Salsa, and remaining taco seasoning. Pulse to combine. **Note - do not over pulse, you want some consistency to remain and not be fully smooth
To assemble the mini tacos, take a small tortilla and place a scoop of the ground turkey mixture and top with a scoop of the bean/salsa mixture. Press together to close (the bean mixture will help hold the tacos closed).
Place the filled tacos in the air fryer and lightly brush tops with remaining olive oil. Air fry for 6 minutes or until golden brown and crispy. You may have to cook in batches, depending on the size of your air fryer.
