Spinach is a Super Food

This dark, leafy green vegetable is a nutrition powerhouse and makes a great addition to a balanced diet and lifestyle.

Some of the benefits of spinach include –

  • fiber
  • iron
  • calcium
  • potassium
  • cancer fighting antioxidants

Nutrition Tip –

Since spinach is a plant based source of iron, combining it with Vitamin C at meals will help improve iron absorption. For example, sprinkle sautéed spinach with a little lemon juice or enjoy a glass of lemon water with meals containing spinach.

This White Bean and Spinach Soup is a staple at my house, especially in the fall and winter months. The recipe is easy and so filling that it easily makes an entire meal on it’s own.

Sneak into Smoothies

My kids don’t like spinach but I’m not giving up! Once a week they enjoy a smoothie and I tend to sneak a handful of spinach in when they aren’t looking. I like mixing it with frozen pineapple and 1/2 a banana…they never even taste the spinach.

Simply Sautéed

Simply sautéing some spinach in a pan with some olive oil, a touch of lemon and pepper is one of my favorite side dishes at dinner time. It’s easy and quick.

Just a little tip when cooking spinach – a handful of spinach cooks down to the smallest amount. I use about 2 cups of raw spinach per person when sautéing.
