The Easiest Fish Recipe Ever
There are so many dishes I don’t end up posting on the website because I think they are so easy that they really don’t feel like a “recipe”.
I made this Baked Cod for dinner tonight and after taking a small bite from an extra piece (not pictured in this photo…because no one wants to see half eaten food), I had to take a few pictures.
Usually I make and remake a recipe multiple times before sharing and photographing because 1) I hate eating cold food and 2) I want to get it just right. Tonight I felt like the first time was perfection!
Baked Cod with Olives , Capers, Lemon and Garlic
There is one flavor combination that is my go to when cooking fish – olives, capers, garlic and lemon. Simple but so flavorful and goes so well with most types of fish. Plus I always have those ingredients on hand.
Tonight’s dinner was no exception. After thawing some frozen Wild Cod Filets, I placed it in a small baking dish, with the flavors named above, a little s&p and ad drizzle of olive oil. The whole dish went into the oven and 20 minutes later it was done. Easy. No mess. Delicious.
If you are nervous when cooking fish, a little tip is to take a fork and see if you can flake off a few small pieces near the center when you think it might be finished. If it flakes off easily and is no longer transparent in color, it’s done. You could also use a thermometer and if it’s 145 degrees, it’s finished.

- The main ingredient is cod and fish is generally recommended about 2 times a week
- Heart healthy olives are a Mediterranean diet staple
- Olive oil is used in place of butter or other types of oil
- Lemon, garlic and capers add tremendous, bright flavor in place of heavy or cream based sauces

Baked Cod with Olives
Ingredients
- 2 filets Cod (skiness)
- 1/4 cup assorted olives, pitted (we used kalamata and green olives)
- 1/2 lemon zested and juiced
- 1 tbsp capers
- 1/4 cup vegetable broth or water
- 1 tbsp extra virgin olive oil
- 1/2 tsp red pepper flakes
Instructions
- Preheat oven to 400 degrees F
- Place the cod in a rimmed baking dish
- Add the olives, lemon zest, lemon juice, and capers
- Add the vegetable broth or water
- Drizzle the olive oil over top of hte fish and add red pepper flakes
- Place in the oven and bake for 20 minutes, until fish is easily flaked with a fork in the center or a thermometer reads 145 degrees F
