Homemade whip cream always reminds me of summer. My mom used to make a light and fluffy angel food cake and top it with summer fresh berries and homemade whipped cream. It’s still one of my favorites to this day.

The store bought varieties often have lots of additives, preservatives and thickeners added to them. Making it yourself at home takes only a few minutes and uses real, simple ingredients. This is a great example of using the Mediterranean Diet Principle by choosing real ingredients over processed and making more things yourself versus store bought.

Adding Olive Oil to Whipped Cream

I recently saw this article about Olive Oil Whipped Cream from Better Homes and Gardens and knew I had to try it. I was curious about the extra addition into sweet whipped cream.

I tried it a few different times and played around with types of olive oil and amounts. The end result is a light and fluffy whipped cream that’s just slightly sweet and has an extra layer of creaminess thanks to the oil.

Tips for Making Olive Oil Whipped Cream

There are a few things we learned along the way that make all the difference in this recipe.

  • Use a high quality olive oil
  • Using a chilled bowl when whipping the cream helps it set faster
  • Don’t over mix the cream or you’ll end up with butter
  • Once stiff peaks form, turn mixer on low and slowly drizzle in the olive oil

Suggested Uses

In my opinion, this cream recipe tastes amazing just simply paired with fresh fruit and fresh mint. My family loved dipping in fresh, ripe strawberries.

It also goes really well with chocolate and would be amazing in these Mini Brownie Parfaits. The combination of fresh fruit, chocolatey brownies and whipped cream are heavenly.

Ingredients

  • 2 cups heavy cream
  • 1-2 tbsp powdered sugar
  • 3 tbsp olive oil (high quality, extra virgin)

Instructions

  • In a large bowl (chilled beforehand is best but not required), use a handheld mixer to mix the heavy cream and powdered sugar.
  • Note – if you prefer the whipped cream on the sweeter side, add 2 tbsp of powdered sugar, otherwise 1 tbsp will give just a hint of sweetness
  • When the cream starts to form stiff peaks, switch the mixer to low and slowly drizzle in the olive oil. Mix just until the olive oil is incorporated,l if you overmix you will end up with a texture similar to butter
  • Store in the fridge until ready to use
