This recipe has become a go-to in my house and it fits with this week’s fall theme because it just screams “cozy dinner” to me. I can picture serving it on a rainy weeknight, with a glass of red wine, candles lit, maybe some jazz playing in the background….that’s my dream dinner world. In real life, there is probably a football game on tv, cheerios leftover from breakfast stuck on the table, and not a candle in sight. But a girl can dream!
These Chicken & Spinach Meatballs are so easy to make and soooo delicious! Using ground chicken instead of traditional ground beef make them leaner and healthier for you. Plus they have spinach inside (do not tell my kids!), so bonus for being able to sneak in a little leafy greens.
I just serve them as the main entree, usually with tomato soup and a salad or vegetable on the side. They also freeze well, so I’ve made an extra batch on many occasions and kept them in the freezer for backup on nights I just don’t feel like cooking anything new.
Let me just reiterate that my WHOLE, ENTIRE family eats these meatballs…..myself, the hubs, Sophie (2) years old and Race (11 months). Anything that I can make that feeds my whole family is always a big, fat win in my book.
