I love summer time and can’t wait for it to arrive! The fresh fruit, seasonal veggies and warm weather just soothe my soul.
While it’s not quite summer (yet), I saw that Trader Joe’s was having a strawberry recipe content and knew I had to join.
This summer inspired appetizer checks the following boxes –
- focuses on fresh, seasonal produce
- seasoned with fresh herbs
- only uses a few ingredients
- easy to put together, no cooking required
It’s light, fresh and works for appetizers, a small snack, etc.
Summer Strawberry Toast
This dish only uses a few ingredients (all from Trader Joe’s but the same options available at other stores) –
- strawberries
- ciabatta (or any baguette works great too)
- goat cheese
- fresh basil
- balsamic vinegar (which I reduced down to a glaze but you could also buy a balsamic glaze already made or just use regular balsamic vinegar)
There are other variations you can make as well by using other fruit, ricotta or whipped cream cheese, mint, etc. The summer possibilities are endless for this Mediterranean diet appetizer.
Summer Strawberry Toast
Ingredients
- 1 pint strawberries, tops removed and sliced
- 1 small ciabatta bread or baguette, sliced into 1/4 inch thick pieces
- 4-5 oz goat cheese, brought to room temperature
- 2 tbsp balsamic vinegar See note below re: creating a glaze
- 2 tbsp fresh basil, chopped
- olive oil cooking spray
Instructions
- Lay the sliced bread pieces on a sheet pan and spray the top of each slice with olive oil cooking spray (or you can drizzle with olive oil)
- Broil in the oven until golden brown and lightly toasted (about 2-3 minutes)
- Let cool slightly and before assembling
- Spread goat cheese on each bread slice, top with sliced strawberries, drizzle with balsamic vinegar (or glaze if prefered) and garnish with chopped basil
