Fast & Filling Lunch Idea

Preparing in advance is one of the best ways to help you stay on track to live a healthy lifestyle. By that I mean having something on hand (in the fridge or in the cupboard) you can pull out at a moments notice to have for a healthy and filling lunch.


Let’s face it….you can have your meals for the week all planned out in advance and have the best intention to chop up some fresh vegetables and grill some chicken for a nice, healthy salad but then kids have meltdowns, cars breakdown on the side of the road, roofs get surprise leaks, your pre-lunch meeting runs late, etc. All these things happen in life without advanced notice and can ruin your “healthy lunch” plans.

Having a back up that you can grab and prepare in just a few minutes is a lifesaver in these instances…both to your healthy lifestyle and your sanity.

Today’s lunch for me was a favorite of mine….Chicken Salad on a bed of Spinach. It sounds plain but it’s so flavorful, filling and so fast! I made it last night to have on hand for dinner but ended up pulling it out for lunch because our errands ran late and before I knew it, it was 1pm and I hadn’t had a moment to prepare lunch for myself.

 

 

Pro Tip: I used Greek Yogurt in place of mayonnaise when making my chicken salad. If you don’t think you can live without mayo in yours, start by using 1/2 mayo, 1/2 greek yogurt. Then, the next time you make it, use 1/4 mayo, 3/4 greek yogurt, etc until you don’t even miss the mayo anymore.
