How We Meal Plan
We go more in depth on how we go about planning meals in this post – Meal Planning Guide but just to quickly summarize –
- Breakfast is usually pretty standard in our house so I don’t include it on our meal plan list
- My kids either bring a bagged lunch or buy hot lunch at school so I only meal plan for my lunch (and my husband if he is working from home that day)
- I include notes on some days to indicate if the meal is something we have to make quickly, on the go, etc. This really helps when it comes to planning meals and buying food to know our schedule in advance.
- On Saturdays we typically eat leftovers and eat out for lunch or dinner. I indicate that on the meal plan each week but just in case you were wondering
This Week’s Mediterranean Diet Meal Plan
This week was a bit all over the place…on one hand we celebrated the New Year and on the other were still stuck in that strange post holiday back to reality limbo. My kids don’t go back to school until next week but we slowly started getting back to our usual schedule.

Below are the links for any recipes this past week that have actual recipes. Some items (mostly lunch) don’t always have a recipe. For example, there is no recipe for Tuesday’s lunch of quesadillas and grapes.
We have enjoyed this Mustard Skillet Chicken recipe multiple times over the past year. It’s a family favorite. Such a great, hearty and comforting meal. Highly recommend.
This is a weekly meal prep for our house lately. I buy a big bag of sweet potatoes and then roast them in the oven. Then at lunch time, I simply reheat them in the microwave and add chimichurri sauce (from trader joe’s). It’s so good!
This fish recipe is easy and very delicious. Everything gets baked together in the oven.
I created these Thai Style Coconut Chicken Tacos for a recipe contest with Kevin’s Natural Foods last month and simply fell in love with this chicken. We had it again last week, it’s just so fantastic!

Can all of these recipes be adapted to be cooked in an air fryer?
I’m sure most could, I’m not an expert at the air fryer but I’ve personally made chicken and fish in it and it turned out wonderful. Not sure how the recipes would be that included sauces though.

I like your weekly mail plans. But, I did put my name on your mailing list. I did want to use your weekly meal plans. But it is your work. So, I saw the copyright notice. How could I get copies of your meal plans. Is there a fee to get them. I’d think a copyright intended to discourage people to send those to other people.
