How We Meal Plan
We go more in depth on how we go about planning meals in this post – Meal Planning Guide but just to quickly summarize –
- Breakfast is usually pretty standard in our house so I don’t include it on our meal plan list
- My kids either bring a bagged lunch or buy hot lunch at school so I only meal plan for my lunch (and my husband if he is working from home that day)
- I include notes on some days to indicate if the meal is something we have to make quickly, on the go, etc. This really helps when it comes to planning meals and buying food to know our schedule in advance.
- On Saturdays we typically eat leftovers and eat out for lunch or dinner. I indicate that on the meal plan each week but just in case you were wondering
This Week’s Mediterranean Diet Meal Plan
This week was focused mostly on meal prepping and easy to make meals since our week was a bit hectic.
We also had a fun family get together on Sunday and enjoyed a Charcuterie Tray (similar to this one) and a Valentine’s Day Snack Board. Both were easy to pull together and guests could just graze through the day.
Our local Safeway also had fresh crab on sale so we got some and it was so delicious!
Recipes for our Mediterranean Diet Meals
Below you’ll find recipes that we used this past week for our meals. Some days don’t have recipes (ie “pizza”) because they are either just ingredients pulled together or a meal we enjoyed out of the house.

- For this Lentil Salad this week, we used this Miso Salad Dressing from Baked By Melissa, it was amazing!
The Spinach and Goat Cheese Frittata is our recipe from our Mediterranean diet Made Easy Cookbook. It’s one of our favorites for a weekend breakfast or even for a light lunch or dinner.

- This recipe was fantastic! So flavorful and hearty. Highly Recommend.
We also love the Kevin’s natural Foods for quick and easy deals that come together in less than 10 minutes! The Korean Style BBQ Chicken was great this week. This week we just added it to a corn tortilla and served it with a big green salad. So good!
