Summer Memories
Summer is my favorite time of year…it brings back the nostalgia I had as a kid. Back when summer meant no school, sleeping in, warm weather, swimming, frozen treats, and playing outside until it’s dark.
As an adult, summers aren’t usually as fun. However, I have found new things to love about summer as a grown up. Seeing kids playing outside during the day always makes me smile. I also love the smell of sunscreen and days spent at the pool. I think my favorite part of summer is the fresh produce that is in abundance during summer. Watermelon, strawberries and corn are top on my list!
Fresh Summer Fruit
I recently brought home a few too many strawberries from the farmer’s market and wanted to use them up before they got rotten.
I thought about freezing them to use in smoothies but that seemed a bit boring. I’ve been on a Cucumber Spa Pop kick lately and decided to try and use the strawberries to make healthy homemade popsicles.
Creating Healthy Homemade Popsicles
When creating this recipe, I knew it had to check all of the following boxes –
- has to taste like an actual popsicle
- no extra sugar added
- easy to make
- kids have to love them
After taste testing many versions of this recipe, we finally found just the right combination. The best part is that my kids LOVE them! We all sit outside and enjoy a popsicle as a snack in the backyard on the regular.
Just 3 Ingredients Required
I love recipes that don’t require a laundry list of ingredients. The beauty of these healthy homemade popsicles are that they’re a great way to use up any fruit in your fridge that might be close to the end of its life.
All you need is –
- watermelon
- strawberries
- a lime
Trust me when I say that you don’t want to skip the lime juice. It really adds a pop of flavor and goes great with the strawberry and watermelon.
How to Make Homemade Popsicles
Making your own popsicles at home is pretty easy and fun. You’ll need a few things before you begin.
1. A Blender
Most homemade popsicle recipe require a blender to puree all the ingredients together. Typically you want a really smooth base for your popsicles. I personally use a Vitamix (it was gifted to us by Dan’s sweet grandparents when my daughter was first born) but any high powered blender will work.
2. Popsicle Molds
You can purchase popsicle molds many different places – Target, Walmart, Amazon, etc.
I use these popsicle molds that I ordered from amazon and they are fantastic. Easy to clean, it comes with a lid and best of all the popsicles slide out really easily.
Enjoying Summer Treats
We may not get months off of work when summer hits, but at least we can enjoy a popsicle!

Summer Strawberry Popsicles
Ingredients
- 1 cup watermelon
- 1 cup strawberries hulled
- Juice of 1/2 lime
Instructions
- Add ingredients to a blender and puree until smooth
- Pour into popsicle mold
- Place in the freezer to set
