Frozen Fruit Salad Recipe

One of the reasons I just love summer is the plethora of fruit available. Fresh fruit really helps satisfy the huge sweet tooth that I have and it’s just so delicious! I’m also lucky that my kids love fresh fruit.


That being said, sometimes fresh fruit isn’t always available or always on hand in our house. We grocery shop about once a week, but sometimes we just eat all the fresh fruit within days!

This recipe for frozen Fruit Salad with mint and tequila was in May’s edition of InStyle Magazine. First of all, I was immediately drawn to the words “tequila” and “fruit” together (no shame in my game). So I tore out the recipe and saved it for later. I actually had most of the ingredients on hand, but decided to make it kid friendly (shucks) and omit the tequila and change up the fruit a little bit based on my freezer stock.

It is so simple to make and really looks beautiful when all combined. The fresh mint adds a nice touch and pairs well with the fruit. I really like the idea of using frozen fruit in a salad because it’s something you can keep on hand without worrying about it spoiling too quickly. Plus frozen fruit is relatively inexpensive and often available year round. This recipe is easy to make and actually quite refreshing. The original recipe said to let the fruit salad sit for 1 hour before eating but it was still a bit frozen. Therefore, I think it really needs 2 hours.

My daughter Sophie absolutely loves fruit (we potty trained her using tomatoes as an incentive), so we decided to conduct a Toddler Food Review like we did awhile back. So without further ado, here is Sophie’s opinion on this recipe:

Overall, she liked the fruit salad a lot but didn’t care for the mango (she confuses the peaches with mango in the video) and didn’t care for the mint. Easy to tailor to her liking to prepare a snack she loves!

Frozen Fruit is used to create a delicious fruit salad that is simple, easy and kid friendly.

Ingredients

  • 1 cup frozen strawberries
  • 1 cup frozen peaches
  • 1 cup frozen mango
  • 1 cup frozen blueberries
  • 1 tbsp lemon juice
  • 2 tbsp agave
  • Zest of 1/2 lemon
  • 1 sprig fresh mint plus additional for garnish

Instructions

  • Add all items (except for mint garnish) to bowl. Cover and let sit for 2 hours. Gently remove fruit from original bowl (leaving marinade behind) and place in serving bowl. Top with fresh chopped mint and enjoy!
