I’m totally all over any vegetable that can just be thrown in the oven whole. No chopping, dicing, slicing needed. That makes this Whole Roasted Cauliflower the perfect side dish!
It’s funny how popular cauliflower has become in the last year or so. You can find it whole, chopped, as a crust, or riced in many recipes these days. I feel like just five years ago, most people wouldn’t touch cauliflower with a ten foot pole. It was just something our mothers used to make us eat as kids to torture us. Now it’s like the Beyonce of vegetables, everyone loves it and it’s everywhere these days. You have to love any vegetable that can be used in a Bey-metaphor. Or is it simile…don’t know, don’t really care.
Back to the matter at hand…whole roasted cauliflower. I made this a couple weeks back when we had our Spicy Thai Noodles for meatless monday and have made it two more times since then! It’s easy to prep, tastes great and everyone in the family loves it. Win win for me!
Whole Roasted Cauliflower
Ingredients
- 1 head of cauliflower stem and leaves removed
- 1/3 cup butter melted
- 1 Tbsp fresh dill chopped
- 1 tbsp fresh flat-leave parsley chopped
- 1/4 tsp cumin
- 1/4 tsp corriander
- pinch of salt
- 1/4 tsp pepper
Instructions
- Preheat over to 350 degrees
- Place whole cauliflower head in a baking dish
- In a bowl, mix butter, dill, parsley, cumin, corriander, salt and pepper
- Drizzle over cauliflower and cover dish with foil
- Place in oven and cook for 50 minutes
- Remove foil and return cauliflower back to the over for additional 10 minutes
- Serve on platter and pour melted butter sauce remaining in baking dish over the cauliflower
When I say this recipe is simple, I mean it’s simple. All you have to do is buy a head of cauliflower, cut off the stem and any leaves,
Trust me when I say that you’ll want to drizzle the extra melted butter from the pan all over this bad boy before serving. It’s just the icing on the cake. I make one whole cauliflower for my family of 4 and it’s devoured! Not a crumb left in site.
