We are still riding the Meatless Monday train here at our house. I realize it isn’t Monday and I’m posting this Pumpkin Gnocchi with Brown Butter & Sage recipe, but we had it for dinner this week and I just couldn’t wait to share it.
We’ve had gnocchi many times before at our house but it’s always store bought. The kids love it, it’s fast and inexspensive. I’ve jazzed it up (like in this Gnocchi Skillet recipe) but I’ve been trying to make more meals from scratch lately. In a world that’s become so fast-paced and pre-prepared, I’ve been really trying to slow down. For us that means preparing fully home cooked meals.
My daughter loves to help cook and I though it would be fun to try making gnocchi from scratch together. However, she got a new doll the night before and chose to play instead of cook. That’s how life works sometimes.
Easy To Make!
I found a few recipes online that I used for basic technique instruction, but played around with my own recipe for the actual gnocchi. Typically when I make a recipe, I have to test and tweak it a few times before I share it online. However, this recipe came out so good the first time! I was really surprised how easy the actual gnocchi making process was!
I love that you don’t have to use any fancy pasta rolling equipment. If you have a bowl, a cutting board and a sharp knife…you can easily make your own gnocchi. No chilling of dough required. You basically make the dough, roll it into logs, cut it into “pillows”, boil in water, and toss in a brown butter sauce. It’s definitely a “wow” factor dish with minimal effort required.
This would be an amazing dish to make for a dinner party, upcoming holiday get-together or just a meatless monday!

I am really enjoying cooking with pumpkin at the moment and this looks so lovely. I really like how the gnocchi look a bit browned on the outside too!
With a dairy allergy I usually can’t have gnocchi so, this is being pinned! I’ve made a sweet potato version before but there’s just something about butternut squash and Sage!
